What is modernist cooking?

What is modernist cooking? Is it about the food or about the science? I would have to say that I think the science is paramount – it is called molecular gastronomy for a reason. Food is nothing more than a collection of molecules and cooking is simply a series of chemical reactions.

Everything about cooking is a science, the way it is presented is an art. Molecular gastronomy needs to be a fusion of the two.
